Upside Down Peach Cake

Ingredients

  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 2 peaches sliced and peeled
  • 1 1/4 cup flour
  • 1/2 cup brown sugar  
  • 1 1/4 teaspoon baking powder
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 1/2 cup milk
  • 1 egg

Preparation

  1. Pour melted butter into a 9 inch round or 8 inch square baking pan. Sprinkle brown sugar over butter.
  2. Arrange sliced peaches in the pan over the brown sugar and butter.
  3. In a large bowl, cream 1/2 cup butter and sugar together. Once creamed, mix in the egg and vanilla.  
  4. In a separate bowl, combine flour, baking powder and salt.
  5. Add flour mix to creamed mixture by alternating flour and milk. Spoon batter over peaches. Use a spatula or butter knife to carefully spread across the pan, making sure to keep the peaches on the bottom of the pan.  
  6. Bake at 350 degrees for about 45 minutes. Use a knife/toothpick to test the cake.  
  7. Cool cake for 10 minutes, then flip cake onto a plate for serving.
