Upside Down Peach Cake
Ingredients
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 2 peaches sliced and peeled
- 1 1/4 cup flour
- 1/2 cup brown sugar
- 1 1/4 teaspoon baking powder
- 3/4 cup sugar
- 1/4 teaspoon salt
- 1/2 cup butter
- 1/2 cup milk
- 1 egg
Preparation
- Pour melted butter into a 9 inch round or 8 inch square baking pan. Sprinkle brown sugar over butter.
- Arrange sliced peaches in the pan over the brown sugar and butter.
- In a large bowl, cream 1/2 cup butter and sugar together. Once creamed, mix in the egg and vanilla.
- In a separate bowl, combine flour, baking powder and salt.
- Add flour mix to creamed mixture by alternating flour and milk. Spoon batter over peaches. Use a spatula or butter knife to carefully spread across the pan, making sure to keep the peaches on the bottom of the pan.
- Bake at 350 degrees for about 45 minutes. Use a knife/toothpick to test the cake.
- Cool cake for 10 minutes, then flip cake onto a plate for serving.
